Toor Dal Khichdi/ Tuvar Daal ni Khichdi/ Khandeshi Khichdi Recipe



Toor daal Khichdi basically a mixture of rice n toor daal with tadka of aromatic spices. Khichdi is one of the comfort Indian food.

Toor Dal Khichdi/ Tuvar Daal ni Khichdi/ Khandeshi Khichdi Recipe


Preparation Time: 5 mins
Cooking Time: 25 mins
Servings:  2-3 people

Ingredients:
  • Toor daal: 1/2 cup
  • Rice: 1 cup (200ml)
  • Garlic (roughly chopped): 5-6 cloves
  • Oil: 3 tbsp
  • Mustard seeds (Rai): 1/4 tsp
  • Cumin seeds (jeera): 1/2 tsp
  • Turmeric powder (Haldi): 1/2 tsp
  • Red chilli powder (Lal Mirch): 3/4 tsp
  • Coriander powder (Dhania): 1,1/2 tbsp
  • Garam masala: 1/4 tsp
  • Asafoetida (Hing): 1/8 tsp
  • Salt: As per taste
  • Water: 4.5 cups

Method:
Step 1: 
Heat some oil in the pressure cooker. Once the oil is heated, add rai to it. When rai begins to splutter, add jeera, hing, and garlic to it.

Step 2: 
Once the garlic is being cooked, add haldi, lal mirch, dhania powder, and garam masala to it. Cook masala for 2 mins on low flame.
Step 3: 
Add daal and cover the pressure cooker with a plate. Let daal cook for 3 mins on medium flame.
Step 4: 
Add rice and salt, give it a good mix. Now add 3 cups of water and cook till it boils, on medium flame (open).
Step 5: 
When dal is 60% cooked (as shown in image), add 1.5 cups of water, and adjust the salt. Cover the lid of the cooker and take 3 whistles on high flame and 1 on medium flame.
Step 6: 
Switch off the flame. Let it cool down completely then open the lid. Garnish with freshly chopped coriander leaves & serve hot with ghee.

Notes:
  1. Remember to cover the lid when daal is 60% cooked.
  2. Water quantity is very important in khichdi, if you add more water to recipe, it may overcook.
  3. You can add ghee to Khichdi as it enhances the taste.
  4. Toor Dal Khichdi/ Tuvar Daal ni Khichdi/ Khandeshi Khichdi is best served hot and you can pair it with salad, papad and spicy mango pickle.
