Guvar nu Shaak/ Cluster Beans/ Rasse vali Gawarfalli in Cooker Recipe

Gawarfalli can be cook with various methods, but I prefer to cook it in a pressure cooker. It is also called Cluster beans in English and Guvar in some parts of India.

It is flat in shape. I like to cook it with Ajwain (Carom seeds) and Gud (Jaggery). So let's get started.


Guvar nu Shaak/ Cluster Beans/ Rasse vali Gawarfalli in Cooker Recipe:


Preparation Time:10 mins
Cooking Time: 20 mins
Servings:  2-3 people


Ingredients:

  • Gawarfalli (chopped): 2 cups
  • Oil: 2-3 tbsp
  • Mustard seeds (Rai): 1/4 tbsp
  • Cumin seeds (Jeera): 1/2 tsp
  • Asafoetida (Hing): 1/8 tsp
  • Carom Seeds (Ajwain): 1/2 tsp
  • Turmeric powder (Haldi): 1/2 tsp
  • Red chilli powder (Lal Mirch): 3/4 tsp
  • Coriander powder (Dhania): 3/4 tsp
  • Jaggery (Gud): 1 tbsp
  • Salt: As per taste

Method:
Step 1: 
Wash all the gawarfalli thoroughly with water and remove both ends of them. Cut them as shown in images and keep it in water.

Step 2:
Keep pressure cooker on stove, heat some oil on medium flame. Once the oil is hot, add rai. When rai start to splutter; lower the flame, add hing, jeera and ajwain to it.
Mix it well and cook it for 1 min. 

Step 3:
Now add Haldi powder, Lal Mirch powder, Dhania powder  and mix well. Cook masala for 3mins on low-medium flame.

Step 4:
When masala is cooked for 3 mins, add washed and chopped gawarfalli to it and give it a good mix.

Step 5:
Now add Jaggery, salt n mix well. Cook it for 1 min.

Step 6:
Now add water, mix well. Close the lid of pressure cooker and take 5 whistles medium-high flame. Now low the flame cook for 8 mins with covered lid.


Step 7:
Switch off the flame and let it cool down till full pressure is released from the pressure cooker. You can see the change in color of gawarfalli when it is cooked (as shown in image).
                                
Our Rasse vali Gawarfalli is ready. Garnish it with freshly chopped coriander leaves. Serve hot.
                           



Notes:


  • We can also add roasted and coarsely powdered peanuts after step 2.
  • You can add 2 tsp of lemon juice to the recipe as it enhances the taste.
  • Guvar nu Shaak/ Cluster Beans/ Rasse vali Gawarfalli best served hot and you can pair it with Fulkas, Pooris, or Parathas.
