Bharwa baigan can be cook with various methods, but sometimes it becomes too time-consuming. That's why we come up with a simple and quick recipe that we can cook in a pressure cooker also.
Bharwa Baigan is a super tasty dish of small brinjals with the stuffing of roasted & coarsely powdered peanuts & sesame seeds, grated coconut.
Easy Bharwa Baigan in cooker/ Bharela Ringan/ Stuffed Brinjal Recipe:

Ingredients:
For Stuffing:- Roasted & coarsely powdered peanuts: 2 tbsp
- Roasted & coarsely powdered sesame seeds: 2 tbsp
- Grated coconut powder: 2 tbsp
- Turmeric powder (Haldi): 1/4 tsp
- Red chili powder (Lal Mirch): 1/2 tsp
- Coriander powder (Dhania): 1/2 tsp
- Garam masala: 1/4 tsp
- Asafoetida (Hing): 1/8 tsp
- Sugar: 1/2 tsp
- Salt: As per taste
Other Ingredients:
- Baigan Small (Ringan/brinjal): 3-4
- Roughly Chopped Onion: 1/2 cup
- Oil: 2-3 tbsp
- Mustard seeds (Rai): 1/4 tsp
- Cumin seeds (Jeera): 1/4 tsp
- Turmeric powder (Haldi): 1/4 tsp
- Red chili powder (Lal Mirch): 1/2 tsp
- Coriander powder (Dhania): 1/2 tsp
- Water: 1 cup
Method:
Wash the brinjals thoroughly with water and cut/slit them in a way that it remains joined from the stem side end.
Step 3:
Now add Hing, Haldi powder, Lal Mirch powder, Dhania powder, garam masala, and mix well.
Now add sugar, salt n mix well.
Now stuffing is ready, Stuff the slitted baigans with freshly prepared stuffing.
Step 5:
Take Pressure Cooker, heat some oil, now add rai, jeera, roughly chopped onion to it. Cook the onions till it turns pink.
Step 6:
Now add Haldi, Lal Mirch, Dhaniya Powder to it. Cook masala well. Now add our remaining stuffing to it and give it a good mix. Add stuffed baigans to it and add water.
Step 7:
Close the lid of the pressure cooker and take 4 whistles on high flame and then 1 whistle on low flame. Switch off the flame and let it cool down. Open the lid adjust salt and sprinkle some freshly chopped coriander leaves and serve hot.
Notes:
- Always remember to keep slitted brinjals in water otherwise it becomes black gradually.
- If you don't want to retard the shape of brinjals, take only 3 whistles on high flame and 1 on low flame.
- You can add 2 tsp of lemon juice to the recipe as it enhances the taste.
- Bharwa Baigan/Bharela Ringan/Stuffed Brinjal best served hot and you can pair it with Fulkas, Pooris, or Bhakris.
