Whenever we think about Bhindi ki sabzi, that one thing clicks in our mind is "Mummy ki hath ki bhindi ki sabzi bhut tasty banti hai". Bhindi can be paired with Aloo i.e Aloo bhindi or pyaaz i.e bhindi pyaaz.
On this note, I have prepared one of the kinds of bhindi i.e Kurkuri Bhindi. When we heard the name Kurkuri Bhindi, all we can imagine is fried. But I have prepared this Kurkuri bhindi without frying. So let's get started.
Kurkuri Bhindi/ Crispy Okra Without Frying/ Bhindi Recipe
Preparation Time: 5 mins
Cooking Time: 20 minsServings: 2-3 people
Ingredients:
- Bhindi (Okra): 500 gms
- Oil: 4 tbsp
- Jeera: 1/2 tsp
- Turmeric powder (Haldi): 1/2 tsp
- Red chili powder (Lal Mirch): 1/2 tsp
- Carrom seeds (Ajwain): 1/2 tsp
- Asafoetida (Hing): 1/8 tsp
- Salt: As per taste
Method:
Wash thoroughly & clean all bhindi and dry it with a clean cloth. Cut all the bhindi in a circular shape as shown in the image. Don't use the top and bottom end of bhindi.

After 5 mins, add haldi, lal mirch and salt to it. Saute bhindi after every 5 mins as it is on high flame, there may be chances of overcooking.

Our Kurkuri Bhindi is ready. Garnish it with freshly chopped coriander leaves.
Notes:
- Don't cover the lid of the kadhai.
- Except for tadka, keep your stove flame medium to high to make it crispy.
- You can add 2 tsp of lemon juice to the recipe as it enhances the taste.
- Kurkuri Bhindi/ Crispy okra best served hot and you can pair it with Fulkas or Parathas.
