Rassa Vala khaman, one of the popular street food, straight from Surat city. The base of this dish is crushed Vati Dal Na Khaman. Rassa is made of 3 dals, with the tadka of curry leaves, mustard seeds, and red chili powder. Rassa Vala Khaman is a bit different in taste as well as spicy in taste. People who love spicy food will go great with this dish.

Personally, me and my husband, loves this dish. Two dishes are really awesome in taste when we talk about Surati street food, i.e. Surti Locho and the second one is Rassa Vala Khaman. So, quickly jump to the recipe.

Rassa Vala Khaman | Surti Rassa Vala Khaman Recipe:

Preparation Time: 2 mins
Cooking Time: 10-15 mins
Servings: 2-3 people

Ingredients:

  • Chana dal:  1 tsp
  • Tur/ toor/ tuvar dal: 1 tsp
  • Urad dal: 1 tsp
  • Black pepper (Kali Mirch sabut): 1-2
  • Cloves (laung): 1-2
  • Cinnamon Stick (dalchini): 2-3" long
  • Fenugreek Seeds (methi dana): 5-6
  • Water: 1/4 cup + 2 cups

For Tadka:
  • Oil: 1 tbsp
  • Mustard seeds (rai): 1 tsp
  • Asafoetida (hing): 1/4 tsp
  • Curry leaves (Kadi Patta): 5-6
  • Red chili powder (Lal Mirch): 1 tsp
  • Haldi powder: 1/2 tsp
  • Coriander powder (dhania): 1/2 tsp
  • Salt: as per taste
  • Sugar: 1 tsp (optional)

For Garnishing:
  • Freshly chopped coriander leaves
  • Barik Sev.
Method:
Step 1:
We need to dry roast whole spices. Take a pan, add chana dal, tur dal, urad dal, black pepper, cinnamon stick, cloves, and fenugreek seeds. Dry roast them on low-medium flame for 3-4 mins or until they become aromatic and slightly change their color. Once they're done, take them onto a plate.

Step 2:
Take a mixer jar, add the roasted mixture to the jar. Make a fine powder of it. Now take a bowl, add powder & 1/4 cup of water and mix well as to make a paste. Now add 2 cups of water little by little.

Step 3:
Take kadhai, add some oil. Now add rai. When mustard seeds start to splutter, add Kadi Patta, hing and cook for 30 secs. Now add haldi powder, lal mirch powder, dhania powder, and mix well on low-medium flame.

Step 4:
Now add blended mixture paste and some water if required. Now add salt and sugar (optional). Boil it for 3-4 mins on medium flame. Our rassa is ready.

How to serve Rassa Vala Khaman..??
Crush the Vati Dal Na Khaman (recipe on blog/ click on the name itself/ link shared at end of the page). 

Take 1 plate, add crushed Vati dal na khaman. Pour our freshly made rassa on it. Now add:
  • onion-tomato salad
  • Sprinkle some sev
  • Freshly chopped coriander leaves.
  • Sprinkle some Chat masala
  • Mix them and Serve Hot.
ADDITIONAL:
Onion-Tomato Salad: Take 1 cup of chopped onions & tomatoes, add 1/4 tsp of oil, 1/4 tsp red chili powder or lal mirch,  1/4 tsp black pepper powder, and salt as per taste.
